Longdan Rice Vermicelli Recipe

1 onion, quartered

3 eggs

300g pork minced

2 tablespoon Longdan shrimp paste

3 teaspoons Longdan crab soup base

1 teaspoon salt

3 teaspoon Longdan fish sauce

2 red shallots, thinly sliced

2 cloves garlic, chopped

400g Longdan rice vermicelli

200g Kim Son peeled prawns

200g Kim Son minced crab/ 160g Por Kwan Mince Crab

200g fried tofu

100g fresh bean sprouts

400g herbs: morning glory slice, slice banana blossom, perilla, salad

3 tomatoes, quartered

Cooking instructions

 Step 1: In a large bowl, crack the 3 eggs and beat well. Then add Kim Son minced crab and the minced pork and mix well. Season with salt.

Step 2:  In a soup pot, heat Tofuhat Refined Coconut oil and fry minced garlic and red shallots with till fragrant. Add the tomato, Kim Son peeled prawns, fried tofu and fish sauce. Stir well, cover the lid and cook for 3 minutes

Step 3: Add 3l of boiling water and the onion. Then add Longdan crab soup base and Longdan shrimp paste. Scoop the crab meat mixture into the soup pot and cook until the crab is floating.

Step 4: Cook the vermicelli in boiling water for 3-4 minutes. Take out, rinse again with cold water and drain

Step 5: Soak morning glory slice, slice banana blossom, perilla, fresh bean sprouts and salad in boiled water mixture on top and sprinkle with spring onions.

Step 6:  Place the vermicelli into a medium sized bowl, pour the soup mixture on top and sprinkle with spring onions. 

*Serve with mixed salad. Optional serve with lime and chilli.
