1/Bún đậu mắm tôm

(How to make Bún đậu mắm tôm with Golden Lotus Rice vermicelli)

You will need:

500g dried vermicelli
600g tofu

Bacon: 300g, should choose pork leg meat or pork belly will be more delicious.
50g shrimp paste
4 teaspoons sugar
2 teaspoons fish sauce
1 tablespoon white wine
2 tablespoons lemon juice
Garlic, Chili
Perilla, lettuce, cucumber: optional

How to make:

Step1: Boil 700ml of water
Put the vermicelli in and boil it for 3 – 5 minutes until the vermicelli becomes soft.

Step2: Pour the vermicelli into a colander and drain cold water to cool the vermicelli.

Step3: Wash the pork and then put it in the pot to boil, add salt and ginger to make the meat more delicious.

Step4: Cut the tofu into bite-sized pieces and fry them until golden brown on both sides. Then take it out, drain the oil.

Step5: Add shrimp paste, sugar, lemon juice, white wine and minced garlic and chili, and mix well.

Vermicelli is ready to serve with boiled meat, crispy tofu, mixed shrimp sauce, and vegetables

2/ Bún chả

(How to make Bún chả with Golden Lotus Rice vermicelli)

You will need: 

500g dried vermicelli
Bacon only 350g
Minced pork 250 gr
1/2 green papaya
1 carrot
Minced purple onion 1 tbsp
Minced garlic 1.5 tbsp
Oyster oil 2 tbsp
Honey 3 tbsp
Colored water 2 tbsp
1 little minced chili
Raw vegetables:500 gr: lettuce/perilla/basil, optional
Seasoning: salt, pepper, seasoning
Cooking oil 1 tablespoon
Sugar 220gr
Vinegar 100ml
Fish sauce 220ml

How to make: 

Step1: Put the vermicelli in and boil it for 3 – 5 minutes until the vermicelli becomes soft.

Step2:Pour the vermicelli into a colander and drain cold water to cool the vermicelli.

Step3: Bacon washes with cold water, cut meat into bite-sized pieces.

Step4: Marinate the meat with 1/2 tbsp minced shallot, 1/2 tbsp minced garlic, 1/2 tbsp seasoning, 1/2 tbsp ground pepper, 2 tbsp fish sauce, 1 tbsp oyster sauce, 2 tbsp honey.

Step5: Minced meat, you add 1/2 tbsp minced shallot and 1/2 tbsp minced garlic, 1/2 tbsp seasoning, 1/2 tbsp MSG, 1/2 tbsp ground pepper, 1.5 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp honey. Then roll the meat into balls.

Step6: Carrots, papaya to be washed and cut into bite-sized pieces and then marinated with a mixture of 1.5 tbsp sugar, 1/4 tbsp salt, 1 tbsp vinegar, 1/2 tbsp minced garlic

Step7: Grill pork belly and meatballs until golden brown on both sides.

Step8: Cooking sauce: put 200ml fish sauce, 200gr sugar cup, 100ml vinegar cup, and 2 cups filtered water into the pot and cook on high heat until the spices are completely dissolved and the fish sauce starts to boil, then turn off the stove.

Step9:Vermicelli is ready to serve with grilled meat, mixed sauce, and vegetables.

3/ Rice Vermicelli with vegan soup

You will need:

-2 carrots
-1/4 cauliflower
-1/4 cabbage
-1/4 pineapple
-2 tofu covers
-150 gr of bean paste
-2 ear mushrooms
-100 gr green onions, herbs
-Assorted raw vegetables
-Rice noodle
-Other seasoning

How to make:

Step 1: Soak the mushrooms in cold water for 3 hours, then wash and cut the fibers. Can be substituted with other mushrooms.
Step 2:Tofu cut in half, fried until golden brown, cooled, and then cut into 1cm pieces. Peel carrots, wash, facets, cut into bite-sized chunks. Pineapple, cauliflower, cabbage washed, sliced to taste.
Step 3:Put all the carrots, cauliflower, cabbage, pineapple into a pot of water, boil for about 20 minutes, season with 2 tablespoons soy sauce, half a teaspoon of sugar, and 1 teaspoon of salt.
Step 4:Use another pan to heat 2 teaspoons of cashew oil and then add tofu, black fungus and sauté for 5-10 minutes, while stir-frying, season with 1 teaspoon of soy sauce and a little sugar.
Step 5:Pour the stir-fry into the pot of vegetables, bring to a boil, season to taste. When eating, put vermicelli in a bowl, fill with broth with vegetables, sprinkle with coriander, serve with raw vegetables and coriander.
