1/ Beef Phở

(How to make Beef Pho with Golden Lotus Rice stick?)

You will need:

Golden Lotus Rice stick 1 pack
Beef 500 gr
Pork bone 100 gr
Beef Pho soup seasoning 1 pack
Onion 1 piece
Purple onion 4 pieces
Ginger 1 piece
Rock sugar 2 tbsp
Vegetables to eat pho: optional
Seasonings: sugar, monosodium glutamate, salt, seasoning

How to make: 

Step 1: Preliminary and blanching of meat:
Boiling 1 pot of water with the crushed red onion.
Add the washed beef and pork bones and blanch for about 3 minutes. Then, remove the meat and put it in a bowl of cold water.
Step 2: Preliminary of other ingredients:
Onions, red onions, and ginger are cut off the roots and washed.
Then bake the onion, 2 red onions, and ginger on the stove for about 2 minutes until aromatic.
Put the Pho seasoning in the pan and roast on the stove over medium-low heat for 4 minutes until aromatic. Put the roasted spices into the filter bag and tie the bag tightly.
Step 3: Cooking broth
Put in a pot of 1.5 liters of water with blanched beef and pork bones, cover, and simmer for 1 hour.
Waiting for the water to boil, then put the onion, red onion, aroma grilled ginger, and the roasted Pho seasoning bag into the pot.
Add to the pot 2 tbs of rock sugar, 2 tbs salt, 1.5 tbs MSG, 1.5 tbs seasoning, and stir well, cover for 3 minutes and then turn off the heat.

Step 4: Boil 700ml - 1l of water
Put the Pho in and boil it for 3 – 5 minutes until the Pho becomes soft. Pour the Pho into a colander and drain cold water to cool the Pho.


Step 5: Enjoy meal:
Take out the boiled beef and cut it into bite-sized pieces
Put the pho noodles in a bowl, arrange the beef on top, then pour the broth and add some sliced chili, pho vegetables such as coriander, green onions, ...
Pho will be more delicious when served with chili sauce.

 

2/ Chicken Phở

(How to make Chicken Pho with Golden Lotus Rice stick?)

You will need:

Chicken bones: 1.5 kg
Chicken meat: 0.5 - 1kg or half a chicken (depending on the number of family members)
Onions: 2 pieces
Purple onion: 5 pieces
Dried pho: 1 kg or 1.5 kg.
Spices (fish sauce, seasoning, salt, pepper, granulated sugar), cinnamon, star anise, cardamom, onion, and garlic.
Scallions, onions, coriander, and cilantro,
Vegetables: basil, coriander, raw bean sprouts, lemon, chili.

How to make:

Step 1: Preliminary of ingredients and spices
Chicken bones and chicken meat washed with warm water, 2-3 times to clean.
Onions, red onions, and ginger are washed, peeled, and grilled on the stove.
Wash scallions, vegetables and drain.
Bare Pho noodle through boiling water to clean and reduce acidity, drain.
Onions, scallions, and peppers are finely chopped.
Star anise, cinnamon, cardamom are roasted for aroma and then put in a cloth bag.

Step 2: Cooking broth for chicken noodle soup
After the chicken is washed and rubbed with salt, put it in a pot of cold water and boil over medium heat. When boiled, add crushed ginger, red onion, and a little salt.
After the boiled broth, turn down the heat, remove the foam, and then open the lid of the pot. Note that boiled chicken should not be overcooked, chicken is easy to dry and lose sweetness.
After the chicken is cooked, take it out to cool, you can cut it into pieces or shred it as you like.
After the chicken bones are cleaned, put them in a pressure cooker and pour boiling water into the stew until the bones are soft.
Put the seasoning cloth bag tied into the pot, season to taste, and stir until the spices are fully combined. Simmer for about 20 minutes, then remove the seasoning bag. Then, let the heat simmer until the water is hot.

Step 3: Boil 700ml - 1l of water

Step 4: Decoration and enjoy the meal

3/ Pad Thái

(How to make Pad Thái with Golden Lotus Rice stick?)

You will need:

400 gram Golden Lotus Rice Stick
300-gram medium shrimp, peeled and deveined, cubed.
1-2 egg
Seasoning: 2 tbs fish sauce, 2 tbs rice vinegar, 2 tbs sugar, 1/2 teaspoon chili powder, (optional)
2 tbs vegetable oil
1 tbs minced garlic
1/3 cup tamarind juice or tamarind concentrate
1/2 cup bean sprouts
1/4 cup coarsely chopped unsalted peanuts
Chopped fresh cilantro
Lime wedges

How to make:

Step 1:Preliminary of ingredients and spices:

Wash and remove peel and tail of shrimp then deveined and cubed.
Light beaten egg in a bowl
Vegetable wash and drain
Step 2: Cooking and making sauce
Put the rice noodle in and boil it for 3 – 5 minutes until the noodle becomes soft.
Pour the rice noodles into a colander and drain cold water to cool the noodle.
Mix tamarind juice, fish sauce, vinegar, sugar, and chili powder in a small bowl.
Heating oil in a large skillet or wok on medium-high heat.
Add garlic; stir fry 30 seconds or until aroma.
Add shrimp; stir fry 2 minutes or just until shrimp turn pink.
Push shrimp to the side of the skillet. Add egg to the middle of the skillet.
Stir in rice noodles and tamarind mixture; stir fry 1 minute or until heated through.
Step 3: Decoration and enjoy the meal
When eating, place noodle mixture on the serving platter. Sprinkle with bean sprouts, peanuts, and cilantro, and a little bit of lemon juice.
